The ingredients you’ll need for this recipe are:

  • 2 tbsp. of butter
  • 1 diced onion
  • 1 diced bell pepper
  • 1 can of green chilies
  • 1 tsp. of cumin
  • 1 tsp. of coriander
  • 1 tsp. of paprika
  • 1/2 tsp. of salt
  • 2 tbsp. of scallions

for the batter:

  • 1/2 cup of gluten-free cornmeal
  • 1/2 cup of gluten-free all-purpose flour
  • 1 tsp. of salt
  • 2 tsp. of sugar
  • 2 tsp. of baking powder
  • 2 eggs
  • 1 cup of sour cream
  • 1/4 cup of melted butter
  • 1 1/2 cups of cheese of your choice (grated)

Now all you need to do is:

Step 1: Prepare the Filling

Gather the ingredients you need and preheat your oven to 375F. Heat pol in a pan or skillet over medium heat. Add your onions and saute for a few minutes. Once golden, add the pepper and cook for a further few minutes. Now add the corn and leave for a few minutes. Now add the chilies, scallions, cumin, coriander, paprika, and salt. Mix well and saute for around 2 minutes. Remove from heat.

Step 2: Prepare the Batter

Grab a bowl and add the gluten-free cornmeal, gluten-free all-purpose flour, sugar, salt, and baking powder. Mix well with a whisk. In a separate bowl, add the eggs and sour cream; mix well. Slowly add the melted butter to the sour cream/egg mixture and stir.

Step 3: Mix

Now add your sauteed mixture, cornmeal mixture, and egg mixture all together in one bowl and mix well. Once mixed, add 3/4 cup of cheese and pour the batter into a baking dish (ensure it’s been greased before pouring in the batter). Once poured, add the remaining cheese over the top of the dish.

Step 4: Bake

Cook in the center of your preheated oven for around 30 minutes. When it’s golden and dome-like, you’ll know it’s ready to eat! Remove from oven and serve warm. Enjoy!

  • salt (to taste)
  • pepper (to taste)
  • 2 beaten eggs
  • 1 cup of corn meal
  • 1 1/2 cups of gluten-free oat flour
  • 3/4 tablespoon of baking powder
  • 1 teaspoon of baking soda
  • 1 tablespoon of butter

Now all you need to do is:

Step 2: Prepare the Mixture

Grab a bowl and add the corn, onions, peperoncino, cheese, eggs, salt, pepper, and garlic powder. Mix well. Put to one side and add the cream, yogurt, and cream cheese to a pan over medium heat. Once slightly melted, add the mixture to the corn mix. Mix well. In another bowl, add the dry ingredients you have left and stir. Then fold into the corn.

Step 3: Bake
