Frozen Yogurt Bark with Berries
This colorful, customizable treat is as pretty as it is refreshing. Simply spread your favorite dairy-free or Greek yogurtonto a parchment-lined baking sheet, swirl in a little honey or maple syrup for sweetness, and scatter the top with fresh berries, shredded coconut, and a sprinkle of gluten-free granola. You can also add a handful of hemp seeds, sunflower seeds, chia, or sesame seeds for a nutritional boost and extra crunch. Freeze for several hours or overnight, then break into bark-style pieces and store in an airtight container in the freezer.

Take gluten-free rice cakes, spread with Marshmallow Fluff or Jet-Puffed Marshmallow Creme, and add a layer of Nutella or another chocolate-hazelnut spread—add some sliced bananas for extra goodness. Top with another rice cake, wrap, and chill for a crunchy, sweet, no-mess treat. You can even swap in peanut butter or banana slices for a healthier twist.
For a more classic s’more experience, wrap the assembled rice cake s’mores in foil and warm them gently near a campfire or on a grill. The chocolate and marshmallow will melt into a gooey center, while the rice cakes soften slightly—just be careful not to burn or overheat them, as they’re more fragile than graham crackers.

Peanut Butter Chocolate Rice Crispy Cups
These chewy, chocolatey bites are like a gluten-free twist on classic crispy squares—no marshmallows or baking required.
In a saucepan over low heat, melt together ½ cup natural peanut butter, ¼ cup maple syrup (or honey), and ¼ cup coconut oil until smooth and warm. Remove from heat and stir in 1½ to 2 cups gluten-free crispy rice cereal (look for brands like Nature’s Path or One Degree) and a pinch of sea salt. Spoon the mixture into lined mini muffin tins or silicone molds and press down gently to compact—or press into a baking pan and cut to size later.
Top each with a drizzle of melted dark chocolate and a sprinkle of shredded coconut, hemp seeds, or a pinch of flaky sea salt. Freeze for 30–60 minutes until firm, then store in an airtight container in the fridge or freezer.
These are perfect for hot days when turning on the oven just isn’t an option, and they’re endlessly adaptable depending on what you have on hand.
Tip: Double-check that your crispy rice cereal is labeled gluten-free, as many conventional versions may contain barley malt extract.

Fruit and Coconut Milk Parfaits
Layer sliced summer fruit like peaches, strawberries, or blueberries with whipped coconut cream or a thick, dairy-free yogurt. Top with a crumble of your favorite gluten-free cookie or gluten free granola for texture. For added nutrition, sprinkle in sunflower seeds, hemp seeds, or chia seeds for a protein and fiber boost. Assemble the parfaits in mason jars or small containers for easy, portable servings—perfect for picnics or road trips.
