If you’d like to make your own gluten-free spinach wraps, you don’t need many ingredients at all. Let’s take a look at this Spinach Tortilla recipe from Bianca Zapatka, which we’ve adapted to suit a gluten-free lifestyle.

Ingredients

The ingredients you’ll need for this recipe are:

  • 7oz of spinach
  • 1/4 cup of vegetable oil
  • 1 teaspoon of salt
  • 3 cups of gluten-free flour (all-purpose)
  • 1 teaspoon of baking powder

Recipe

Now all you need to do is:

Step 1: Prepare the Spinach

Heat a pan over medium heat. Clean the spinach and place it into the pan. Cook for a few minutes until it starts to wilt (this should take 1-2 minutes). Now drain the spinach and wash it under cold water. Add the spinach, salt, and oil to a blender or food processor and blitz until smooth.

Step 2: Make the Dough

Grab a bowl and add the flour and baking powder. Mix well. Add the spinach and around 1/4 cup of water. Using your hands, mix the ingredients together and continue to knead until you make a dough. You may need to add some water or add some extra flour, depending on the consistency. This usually takes around 5 minutes.
