Fried Potato Flatbread Recipe


The ingredients you’ll need for this recipe are:

  • 400g of russet potatoes (around 3 medium-large)
  • 1 cup of gluten free all purpose flour (and extra to knead)
  • 1/2 teaspoon of salt
  • pinch of nutmeg
  • 1 tablespoon of oil (and extra for frying)
  • 1/3 cup of chopped scallions

Step By Step

Step 1: Prepare The Potatoes

Add some water to a pan, along with salt. Add your potatoes after rinsing them. Boil the potatoes in the water over a medium heat until they are fork-tender. Once tender, remove from heat and leave to cool. Once cool, peel them. Transfer to a bowl.

Step 2: Make The Dough

Into the bowl of potatoes, add the flour, salt, nutmeg, oil and scallions. Begin to mash with a potato masher. Begin mixing with a spoon. Once a dough starts to form, you can start to knead with your hands. Regularly add flour to your hands to prevent the dough becoming too sticky.

Step 3: Fry The Flatbread

Divide the dough into 8 even parts and roll into balls. With a rolling pin, roll the dough between two sheets of parchment paper. Repeat until all flatbreads are ready. Add some oil to a pan over a medium heat. Once hot, add one flatbread at a time. Remove the layers of parchment paper as you go. Cook for around 2-4 minutes on one side, and then a further 1-2 minutes once you’ve flipped it over. Repeat until all flatbreads are cooked.

Step 4: Serve

Serve as they are, or add some herbs or garlic oil to make them even more delicious. Enjoy!
