However, bread is one of the most common foods that contain gluten, so it can be quite tricky to find somewhere that offers gluten free bread, and takes the necessary precautions when preparing the order. Potbelly is a casual sandwich shop based in the US, that serves sub sandwiches, as well as salads, soups, ice creams and milkshakes. Potbelly has been around for over 45 years and has almost 500 stores around the US.
Does Potbelly Have Gluten-Free Bread?
Unfortunately, Potbelly does not currently offer any gluten-free bread. For such a large chain, this is disappointing, but I usually take my own gluten-free bread to places that do not offer it. Many of the fillings are usually gluten-free, so that may be the best way to work around it!

For an item to be exclusively gluten-free, it must be prepared in a separate area than gluten-containing foods. As Potbelly doesn’t offer this, there is a huge risk of cross-contact.
Cross-contact occurs when gluten and non-gluten foods are prepared in the same area, so there’s a high chance your food may contain traces of gluten.

- 1/2 tablespoon of olive oil
- 1 Portobello mushroom (sliced)
- 1 teaspoon of oregano
- 1 gluten free baguette (sliced in half)
- 4-6 tablespoons of hummus
- 1/4 cup of roasted red peppers
- 3 canned artichoke hearts
- 2 slices of cheddar cheese or 1/4 cup of feta cheese
- 6 slices of cucumber
- 2 tablespoons of black olives

Step-by-Step to Make Potbelly Gluten-free Recipe
Now all you need to do is:
Step 1: Prepare the Hummus
Before you make the sandwich, prepare the hummus. Place the garbanzo beans, red pepper, red pepper flakes, salt and pepper into a food processor or blender. When the pieces are all of a similar size, add the olive oil and blend until you have a smooth consistency. Remove from blender and leave to one side
Step 2: Cook the Veggies

Remove from broiler and add cucumbers, olives, lettuce, tomato, pickles and dressing of your choice. Place the top half on top of the bottom of your sandwich. Cut in half and enjoy!
